Ingredients

  • 1 avocado, peeled and sliced
  • pinch of freshly ground black pepper
  • 1/2 c blueberries
  • 1/4 c cider vinegar
  • 1/4 c dried cranberries
  • 1 mango, peeled and sliced
  • 1/4 c good olive oil
  • 4 c salad greens (I used a spring mix with baby spinach)
  • 1/8 tsp salt
  • 1 c strawberries, sliced
  • 2 tsp white sugar

Instructions

  1. Mince cranberries
  2. Add vinegar, olive oil, cranberries, sugar, salt and pepper to a pint size Mason jar
  3. Shake vigorously 30 seconds to combine
  4. Chill in refrigerator until ready to use.Layer salad greens, mango, avocado, blueberries, strawberries and blue cheese in a two bowls
  5. Top with chilled Cranberry Vinaigrette
