  • 1 apple, sliced thin
  • 6 slices bacon, cut in half
  • 4 thick slices day old Italian bread (1¼ inches thick)*
  • 2 Tablespoons butter
  • 4 large eggs
  • 1½ cups milk
  • Pinch salt
  • 1 teaspoon sugar
  • 1 teaspoon vanilla
  • 4 oz. Dubliner cheese, sliced thin**


  1. Fry bacon over medium heat until crispy
  2. Remove bacon and allow to drain on paper towels.Meanwhile, in a shallow bowl, whisk together eggs, milk, vanilla, sugar, and salt until well combined.Slice each piece of bread through the middle, leaving three sides intact, creating a pocket
  3. Place slices of bacon, cheese, and apple into the pocket.Melt the butter in a large skillet set on medium high heat
  4. Dip the bread pockets into the egg mixture, turning to soak both sides
  5. Place the pockets in the skillet, fry for 30 seconds, then immediately turn the heat down to medium low
  6. Allow to cook for 4-7 minutes or until bread is golden brown and baked clear through
  7. Flip and do the same for the second side.Cut slices in half, sprinkle with sifted powdered sugar, and serve with real maple syrup.***If you’ve never had Dubliner cheese before, it’s a combination of sharp cheddar, swiss, and Parmesan
  8. You can find it in most grocery stores under the brand name Kerrygold
  9. Gruyere or a sharp white cheddar could work as substitutes.*I used La Brea’s Pane Toscano and it was perfect
