Ingredients

  • 1 1/2 cups sweet corn kernels
  • 1/2 cup Feta or cotija cheese
  • 6 large eggs
  • 1 teaspoon fine grain sea salt
  • Homemade hot sauce
  • 1 tablespoon finely chopped jalapeño pepper
  • 1 tablespoon olive oil
  • Chopped scallions
  • Tobasco sauce
  • Chopped tomato
  • 1 1/2 cups broken tortilla chips

Instructions

  1. Preheat oven to 400F
  2. In a medium skillet, heat oil and add scallions and jalapeño pepper
  3. Cook and stir for 1 minute
  4. Add corn and salt and continue cooking for 1 minute, stirring occasionally.In a mixing bowl, whisk together eggs
  5. Add chips and cheese
  6. Pour egg mixture into skillet
  7. Cook for 1 minute, just until the bottom layer of egg begins to set
  8. Transfer skillet into preheated oven
  9. Cook for an additional 6 minutes or so, just until eggs are set
  10. Remove from oven and allow to stand for 10 minutes before serving
  11. Serve with your choice of toppings and extra tortilla chips, for dipping.
