Ingredients

  • 1 tablespoon baking powder
  • fresh berries
  • butter, for greasing the griddle
  • confectioners' sugar
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • lemon curd
  • 1 lemon, zested and juiced
  • butter & maple syrup
  • 2/3 cup milk
  • 1 tablespoon poppy seeds
  • 1 cup ricotta cheese
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat a nonstick griddle over medium-ish heat.In a small bowl whisk flour, baking powder, cinnamon, salt, and sugar together
  2. In a large bowl whisk together the cheese, eggs, milk, lemon juice, zest, vanilla and poppy seeds
  3. Add the flour mixture to the wet ingredients and mix until just combined
  4. Butter the griddle and pour 1/4 cups of the batter for each pancake
  5. Cook on first side until edges are slightly dry and bubbles appear
  6. Flip and cook until golden on remaining side
  7. Repeat until all the batter is used
  8. Serve with maple syrup and butter or warm lemon curd, fresh berries and confectioners' sugar.
